First recipe: Smoked Trout
Ingredients you'll need:
2 rainbow trout fillets, boned
1/3 cup brown sugar
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
1/2 tsp ground cayenne pepper
Steps to bake are as following:
Place the rainbow trout, side by side on smoker racks, making sure they are not touching each other.
Make the rub by mixing together the brown sugar with all the spices. Rub the brown sugar mixture on both trout fillets
Start up the smoker, using wood briquettes of choice (alder or pacific blend works very well!). Bring the smoker up to a temperature of 250 F.
Place the trout fillet in the smoker and cook until the internal temperature reaches 140 F, about 2-3 hours.
Second recipe: Asian Sesame Grilled Tuna Steak
Ingredients you'll need:
2 albacore tuna steaks
1 clove garlic, grated
1 Tablespoon lemon juice
1/4 cup soy sauce
1 tablespoon sesame seeds
1-2 Tablespoons sesame oil
1 scallion, chopped
Steps to bake:
Mix together all ingredients except the tuna steaks in a medium bowl (this is the marinade)
Rinse the tuna steak with water, pat dry and season with salt and pepper on both sides
Add tuna to the marinade, making sure to coat all sides
Marinate for about 30 minutes in the refrigerator, turning once (TIP: don’t marinate too long or the acid in the lemon juice will start to “cook” the fish)
Heat your grill to medium-high heat and oil it
Grill tuna steak for 3 minutes on each side and serve.
